The Mine Shaft

Situation:
Derek Bradway, a bowling alley owner and business man in Houghton, MI, always dreamed of opening a restaurant and entertainment facility to appease the local population’s and tourists need for leisure and amusement in the area.
Their Need
Chef Services Group was hired to work within The Mine Shaft’s economic business model to assist in developing a full service casual-themed restaurant.

Primary Services Provided

  • Ideation and direction for menu offerings and layout
  • Standardized recipe development and standardized, interactive recipe manual development
  • Provided customized culinary presentations based on chosen menu direction
  • Initiated and developed relationships with local purveyors
  • Specified and developed inventory of all food items
  • Specified all smallwares, plateware, and flatware
  • Worked with kitchen design team to create functional kitchen design, equipmentspecifications, and flow
  • Provided Operations Manual based on flow of service
  • Laid out and provided initial training at opening for management and staff
  • Laid out initial set-up of all kitchen stations. Trouble-shoot opening problematic areas.
Results:
The Mine Shaft Entertainment Center opened in March of 2008. The facility includes the Rock House Hardwood Grille restaurant, bar and disco, 18 bowling lanes, a state-of-the-art arcade, go-carts and miniature gulf. Business is booming and continues to grow.
